Im Vergleich zur Haltung von Tieren werden zudem bis zu 99 % weniger Fl\u00e4che und Wasser beansprucht. Meist ist das eine H\u00fclsenfrucht, manchmal auch Getreide. Einige Produkte enthalten eine Mischung, um ein ausgewogenes Aminos\u00e4ureprofil zu erreichen. Dann wird das Protein extrahiert.<\/li>\n\n\n\n<li><strong>Proteinextraktion<\/strong>: <br>a) Bei <strong>H\u00fclsenfr\u00fcchten<\/strong> wie Erbse und Ackerbohne werden die Bohnen zu Mehl gemahlen. Danach werden die leichteren, proteinreichen Partikel von den schwereren, st\u00e4rkehaltigen durch einen Luftstrom getrennt. <br>b) Bei <strong>Soja<\/strong> wird erst das \u00d6l abgepresst und dann der Presskuchen zu einer Fl\u00fcssigkeit vermischt. Diese wird zum Gerinnen gebracht \u2013 es entstehen Proteinbruch und fl\u00fcssige Molke, \u00e4hnlich wie bei der K\u00e4se- und Tofuherstellung. Danach wird der Bruch getrocknet.<\/li>\n\n\n\n<li><strong>Rezeptur<\/strong>: Nun werden der proteinreichen Basis weitere Zutaten hinzugef\u00fcgt, z. B. \u00d6le und Gew\u00fcrze f\u00fcr den Geschmack sowie Pflanzenfasern und Lecithin f\u00fcr die Textur. Alles wird zu einem Teig vermischt.<\/li>\n\n\n\n<li><strong>Garen und Texturierung:<\/strong> Der Teig l\u00e4uft durch einen Extruder, im Grunde ein Schnellkochtopf im Dauerbetrieb. Hitze und Druck erzeugen hier eine faserige, fleisch\u00e4hnliche Textur. Extrusion wird mit anderen Einstellungen f\u00fcr viele weitere Lebensmittel genutzt, z. B. Trockennudeln.<\/li>\n<\/ol>\n<\/div><\/section>\n\n\n\n<section class=\"panels__panel\"><div class=\"panels__title\"><h3>Wie k\u00f6nnen wir pflanzenbasiertes Fleisch in Europa voranbringen?<\/h3><\/div><div class=\"panels__content\">\n<p class=\"wp-block-paragraph\">Es braucht neue Zutaten und moderne technologische Verfahren, um pflanzenbasiertes Fleisch zu erzeugen, das denselben Geschmack und dieselbe Textur hat wie Fleisch aus der Tierhaltung. Bislang wurden nur wenige der pflanzlichen Proteinquellen, die uns weltweit zur Verf\u00fcgung stehen, gr\u00fcndlich erforscht und f\u00fcr die Herstellung von pflanzenbasiertem Fleisch optimiert. Wir stehen also bei der Innovation im Hinblick auf Fleisch-, Fisch-, Eier- und Milchprodukte auf pflanzlicher Basis noch am Anfang.\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Damit pflanzenbasierte Lebensmittel f\u00fcr die Verbraucherinnen und Verbraucher zur ersten Wahl werden, braucht es <a href=\"https:\/\/gfieurope.org\/de\/policy\/public-research-funding\/\">\u00f6ffentliche Investitionen<\/a>\u00a0in Forschung und Entwicklung, die sich auf die Verbesserung des Geschmacks, die Senkung der Produktionskosten und die Straffung der Lieferketten konzentrieren.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Die Ergebnisse der GFI-Marktforschung zeigen, dass insbesondere Investitionen in die Infrastruktur, in die Ausbildung von Arbeitskr\u00e4ften und in die Optimierung von Verarbeitungstechnik entscheidend f\u00fcr den Erfolg von pflanzenbasierten Lebensmitteln sind.<\/p>\n\n\n\n<div
